breakfast {5:15} - i had my breakfast before i knew that we had a delay. school didn't call until around 6 so instead of sleeping in like most people might given a delay, i just had a lot of extra time in the morning. last week i was sleeping later and taking overnight oats in for breakfast to eat at school. i liked the extra sleep but not as much as i like slowly sipping my coffee and spending an hour in the morning reading blogs and hanging out with alton brown, so the early wakeup call is back but the overnight oats haven't left. i forgot how much i loved these. in my mix sunday night went 1/2 a cup of old fashioned oats, greek yogurt and almond milk with 2 T of pb2 and some stevia. in the morning i topped it with crushed up puffins and a heaping spoonful of mighty maple peanut butter. i am really close to being done with that jar of pb so i think some overnight oats in a jar are on the docket for later this week. yum. any excuse to eat more peanut butter. i also had a big ass anjou pear on the side which didn't make it into the pic. clearly sweet breakfasts are back in business over here at heart, sole & cereal. it was nice while it lasted, savory eggs.
breakfast dessert {7:15} - since i had a lot of time in the morning i decided to bake some cookies. extra sleep? who needs it. chocolate chip cookies? i need them. i baked them so i HAD to try them, that's just like a rule. a few of them to be exact. i think dessert after breakfast might need to become a thing.
morning snack {10:30} - i had a bunch of baby carrots for a snack. i forgot to bring hummus to dip them into but i wasn't that hungry since i ate a bunch of cookies so the plain carrots were fine and i pretty much just had them because one of my goals for bootcamp is extra servings of veggies.
lunch {12:45} - same salad i've been rocking for a while now - recycled pic. obviously i didn't have lunch at home. feta, chickpeas, grapes and hummus dressing. veggie sticks and a mandarin orange sparkling water on the side. i have been SHOCKED and PLEASED to discover how many of my students recognize the veggie sticks. though i know that they're basically just another version of potato chips with some spinach powder in them to make them green, at least their parents are trying to make healthier choices at the grocery store! exciting development when i am usually surprised by how many cheetos they can eat in one sitting. speaking of cheetos, i also had a handful of hot cheetos from one of my kids. i traded her a few veggie sticks for them. throwing myself on the sword, people.
afternoon snack {4:30} - i was headed home and had this luna bar in the car while i drove. i was debating going to the gym but after my 16 mile weekend i decided to give my legs a rest on monday instead of thursday. it was great to head to the grocery store and get home in time to make some dinner and eat at a normal hour. resting on monday could become a thing - starts the week off right, especially considering i'm usually making a bigger dinner to have leftovers on hand for the week.
dinner {7:30} - for dinner i went with inside out stuffed jalapeño turkey burgers from dashing dish (she uses chicken but my grocery store doesn't sell ground chicken without rib meat mixed in so i went with ground turkey) and i roasted some idaho potato wedges on the side. i love a sweet potato but there's nothing like your basic white potato wedges.
i also sauteed a bunch of baby bella mushrooms and cut up a few roma tomatoes to have on the side. i topped my burger with extra jalapenos, covered my wedges in cholula and had a spicy good time while i ate.
dessert {8:45} - it was a dessert-ful day monday. gingerbread cookie shake (also from dashing dish) which i actually ate in bed while completing my other best body bootcamp goal for the week...

THANK GOODNESS I'M NOT THE ONLY PERSON WHO LIKES BREAKFAST DESSERT!!!!! Holy heck. Okay. So come on people. If you think that I'm going to have my (1) biggest meal of the day and (2) favourite meal of the day without following it up with a quick bite of something something sweet before heading out the door, you have another thing coming! Yes. Just yes. #win
ReplyDeleteSo we woke up at the same time and enjoyed a delicious early breakfast. I am glad to see someone else sees the benefit of waking up early for breakfast and relaxation. Even if the rest of the day is crazy and stressful at least I had that time in the morning!
ReplyDeleteYUMMMMM dessert after breakfast! You just created a new trend that I would love to join! Good thing my breakfasts are always sweet anyways. Love that you made a tradzies with one of your students. They must love you, bargaining for the junk food and all. Your dinner looks to die for. I wish I wasn't lifeguarding for the third night in a row so I could eat a real dinner. Cold cheese tortellini and frozen pizzas are getting old.

ReplyDeleteI'm completely on board with breakfast dessert. There have been a lot of cookies laying around these parts with all the baking I've been doing lately, and I definitely don't turn my nose up at satisfying the craving whenever it hits... even if it happens to hit at 7 AM ;) I love leisurely mornings. Even when I know I have nowhere to go, I still wake up at the crack of dawn because it just feels so nice to start my day off peacefully. Well, that and I basically jump out of bed to get at breakfast ;)
ReplyDeleteMonday's off are the best! I usually use the extra time in the morning to catch up on sleep and start my week feeling rested. Plus, I don't feel the need to run to the gym in the evening either, I can just take it easy and prep for the rest of the week.

I love youuuuui! I always have breakfast dessert too (hello frozen chocolate power berries) and i love the fact that you used your extra time to bake! I used mine yesterday to clean my ridic apartment but baking would have been a much better choice! And i think i am totally jumping on the monday rest day. Train next week...think my body isnl going to need it after this weekend!

ReplyDeleteAwww love the bear reading your book with you!(I'm assuming it's a teddy bear otherwise I sound like an idiot) I most definitely still have the teddy bear my parents gave me when I was 6 months old. His name is Bear Bear... so creative.

ReplyDeleteAlso, those potato wedges. Oh my goodness gracious. I loooooooove potato wedges, but never even thought to make them for myself. Actually, that entire meal looks fabulous (minus the jalapeños. No thanks). Pretty sure potatoes and baby bellas just found themselves on my grocery list.
oo delay, lucky girl! gotta love those standard salads that you don't get sick of. morning desserts remind me of high school when we'd have donuts in history class on fridays. i'd eat breakfast at home then come to school and during 2nd period be eating a donut, haha! best time for dessert!
ReplyDeleteumm that dinner looks great. i love turkey burgers with a little something like the jalapeno to make them special. oh, and word, sweet potatoes are yummy but white fries are the jam. my dad got some for takeout last night and i finished his. had to do it.
Breakfast dessert is too funny. I happen to do that a lot and I know that's my sister's favorite thing. She can't eat chocolate after a certain time because it keeps her awake, so she usually has it in the morning!
